Such a beautiful bottle. There is also something really special on the inside. It's rich, earthy, smoky and just the slightest sweet. The sauce is kind of mild so I added some serrano peppers to bring up the heat just a little. \"\u003cstrong\u003ePasilla\u003c\/strong\u003e – which means “little raisin” in Spanish – \u003cstrong\u003etastes\u003c\/strong\u003e unsurprisingly \u003cstrong\u003elike\u003c\/strong\u003e raisins, earthy and sweet with a hint \u003cstrong\u003eof\u003c\/strong\u003e smoky cocoa. Dried \u003cstrong\u003eMorita chile\u003c\/strong\u003e peppers are a variety of Capsicum annuum that are almost synonymous with chipotles. They are a red-ripe jalapeño pepper that has been smoked, but the main difference is that dried \u003cstrong\u003eMorita chile\u003c\/strong\u003e pepper is smoked for less time, leaving it softer and retaining a modest fruity flavor.\" The sauce goes so well on chicken, carnitas, steak, potatoes, eggs and just about anything. It's the kind of flavor you can use to really bring a richness to dishes without having to put in much effort. \u003cbr\u003e\u003cbr\u003eI had the honor to collaborate on a sauce with Craola. The ingredients in the sauce really work well together and move forward in an orderly fashion.
